Beet Hummus Serves 5 Prep time: 5 Cook time: 15 minutes Ingredients 2/3 cup chopped beets (about one medium beet) 1 1/2 cups cooked chickpeas (garbanzo beans) 2 cloves garlic 3 tablespoons tahini 3 tablespoons lemon juice 1/4- 1/2 cup water 1 1/2 teaspoons cumin, dry toasted, if desired 1/2 teaspoon sea salt Preparation Cook the beet by steaming in a vegetable steamer or boiling until tender but not mushy, about 15 minutes. Drain and set aside to cool. Place the rest of the ingredients, except the water and pulse, combining. Add the cooked beets and some of the water and process. Add water slowly until desired consistency. Serve with lots of brightly colored vegetables.
