Breakfast Salads…

Yes, I love salads for breakfast! What a great way to begin the day-a healthy breakfast sets your intention for the day.

Simply use any kind of lettuce you like, and if it feels more like breakfast to you, cook an egg-poached/fried/soft-boiled- and place on top of the lettuce. Drizzle with a little olive oil and lemon juice and that could be it. I topped my salad with steamed asparagus.
