Day 6 Buddha Bowl

Today’s bowl is actually half of a small spaghetti squash. While the squash was baking (whole-do cut cut in half) I sauteed some red onions, garlic, shitake mushrooms and kale in just a little olive oil over very low heat.

When the squash was done (it felt fairly soft when I pushed on it) I took it out of the oven, let it sit for a bit, then cut in half, scooped out the seeds and stuffed with the onion/garlic/kale mixture. Simple!

Perfect on this wonderful rainy day!
