Recipe Make-Over...Cookies
Hi everyone,
I was actually watching the Food Network yesterday (I don't generally) and the woman cooking was making cookies using a cake mix, a stick of butter and a large size (8 ounce) of cream cheese! My goodness. Many calories and not many nutrients. I decided to try to take the basic premise and "tweak" it. I went right to the store and actually bought a cake mix (organic cake mix of course) along with some applesauce and some soft silken tofu. I placed the box of silken tofu (I drained out the water that was in the package) with 1/2 cup of applesauce (you could also use pumpkin or prune puree) in a large bowl and mixed it well until it looked smooth. I then added 1 egg (her recipe called for 1 egg as well) and 2 teaspoon of vanilla (her recipe called for 1 teaspoon) I mixed that well. I then aded the cake mix;any flavor you liked, she used chocolate. Mix well again and place in the refrigerator for a couple hours. She rolled hers in confectioners sugar; you can as well, but at least use the organic kind. Bake at 350 degrees for about 12 minutes. My cookies were softer looking than hers, so they were pretty hard to roll. I ended up not trying to roll them and just dropped them on the greased cookie sheet. When they were warm out of the oven, I dusted them very lightly with confectioners sugar. They passed the test! I had quite a few people try them and they were a hit!
Now you know why I don't watch the Food Network all that much! I go right out and try to re-do everything!
Give them a try and let me know. As all of you know I don't buy cake mixes as a general rule, but this one was made organic ingredients and there wasn't any "junky" stuff in it.
